Growing up, my cooking was... experimental, to say the least.
Honestly? It took years of trial and error.
But I’ve always loved good food—and I’ve never been one to waste ingredients or eat something that doesn’t taste great. (Ask anyone who knows me... regular feedings are a must, or I get hangry, fast. 😅)
Over time, I figured out the flavor profiles that work well for me. My mom’s an excellent cook, so I likely absorbed a lot by osmosis—and the rest came from endless questions and obsessive research.
One thing that hasn’t changed? I still throw in a little of this and a little of that.
Cooking has become a way I tune in. When I’m craving something, I follow that instinct and create it—rarely with a formal recipe.
To me, that’s the oneness in cooking:
Being present with what my body wants, gathering ingredients, and preparing a nourishing feast.
It’s only when I overthink that I get tripped up.
So I go with my gut... and I try to use the best ingredients I can find.
Spicy Italian Sausage with Broccoli & Onions
A one-pot wonder—flavorful, balanced, and comforting
Main Ingredients

½ cup Arborio rice

1lb nitrate-free spicy Italian sausage (about 4 large links)

1 medium white onion
-
2 handfuls broccoli florets
-
2 cups chicken broth
Spices (to taste)
(I keep mine alphabetized)
Ancho chile powder, celery seed, garlic powder, oregano, black pepper, red pepper flakes, sea salt, thyme, turmeric
Instructions

Preheat oven to 350°F.
Use a large oven-safe dish or pan with a lid. -
Layer like a paella:

Place rice on the bottom of the pan

Slice sausage into bite-sized rounds; layer on top

Slice onion and nestle between sausage pieces

Spread broccoli florets over the top

Slowly pour broth over everything so the rice layer remains undisturbed.

Season with your chosen spices—and trust your intuition on the amounts.

Cover and bake for about 40–45 minutes, or until the rice is fully cooked and has soaked up all the goodness.
