Ingredients:

1 lb boneless, skinless chicken thighs

1 small onion, diced

1 small fennel bulb, thinly sliced

2–3 carrots, grated

1 small/medium sweet potato, peeled and diced

2-3 cloves garlic, minced
-
1 knob (1-2 inches) fresh ginger, grated or chopped

32 oz chicken bone broth
-
1/3 of a can full-fat coconut milk
-
Juice of lemon or lime to taste

Handful fresh parsley or cilantro, chopped
Spice Blend:

1 tbsp turmeric
-
1 tsp ground coriander
-
1/4 tsp oregano
-
1/4 tsp kaffir lime leaf powder (optional)

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp dried cilantro

Salt and pepper to taste
Instructions:

Toss chicken with spice blend and cook through. Remove from soup pot.
